Broccoli, Chickpea and Root Vegetable Soup
Broccoli is a great source of vitamins K and C, as well as dietary fiber.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until fragrant.

Add carrots, potatoes, and broccoli to the pot. Stir well.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the vegetables are tender.

In a blender or food processor, blend half of the soup until smooth. Return it to the pot.

Add chickpeas, salt, black pepper, paprika, and cumin to the pot. Stir well and simmer for another 5 minutes.

Remove from heat and stir in lemon juice.

Serve hot, garnished with fresh parsley.
