  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes.
  2. Heat oil in a pan and sauté the onions, garlic, and ginger until golden brown.
  3. Add the mixed vegetables and cook for 5 minutes.
  4. Drain the soaked rice and add it to the pan. Stir well.
  5. Add turmeric powder, cumin powder, coriander powder, red chili powder, garam masala, and salt. Mix everything together.
  6. Add water and bring it to a boil. Reduce the heat, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked.
  7. Remove from heat and let it rest for 5 minutes.
  8. Garnish with fresh coriander leaves and serve hot.
