Preheat the oven to 400°F (200°C). Remove the corn kernels from the ears and place them on a baking sheet. Drizzle with olive oil, salt, and black pepper. Roast in the oven for 10 minutes or until golden brown. In a large bowl, combine the roasted corn, soy beans, arugula, and blueberries. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper. Drizzle the dressing over the salad and toss to combine. Serve immediately.
