In a large pot, heat olive oil and sauté onion and garlic until fragrant.

Add carrot, celery, collard greens, and black eyed peas. Stir well.

Pour in vegetable broth and add bay leaves and cumin powder. Season with salt and black pepper.

Bring to a boil, then reduce heat and let it simmer for 30 minutes.

Remove the bay leaves and stir in lemon juice.

Let the soup rest for 10 minutes before serving.
