Black Cherry Tomato Pasta Sauce
Black cherry tomatoes are smaller and sweeter than regular cherry tomatoes, and they add a unique flavor to this pasta sauce.

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions.

Heat olive oil in a large saucepan over medium heat. Add minced garlic and red pepper flakes. Cook until fragrant, about 1 minute.

Add the black cherry tomatoes to the saucepan and cook until they start to release their juices, about 5 minutes.

Using the back of a spoon, gently crush some of the cherry tomatoes to release more juice. Season with salt and pepper.

Reduce the heat to low and simmer the sauce for about 15-20 minutes, until it thickens slightly.

Stir in the basil leaves and cook for an additional 2 minutes.

Drain the cooked pasta and add it to the saucepan. Toss to coat the pasta in the sauce.

Serve the pasta with grated Parmesan cheese and fresh basil leaves for garnish.
