Bissara is a traditional Moroccan soup made from dried split fava beans and flavored with aromatic spices. It is often enjoyed during the autumn season when fava beans are in abundance.

  1. Rinse the dried split fava beans and soak them in water overnight.
  2. Drain the soaked beans and transfer them to a large pot.
  3. Add water, garlic cloves, cumin, paprika, and salt to the pot.
  4. Bring the mixture to a boil and then reduce the heat to low.
  5. Cover the pot and let it simmer for about 30 minutes or until the beans are tender.
  6. Use an immersion blender or a regular blender to puree the soup until smooth.
  7. Return the soup to the pot and heat it over low heat.
  8. Stir in the olive oil, fresh cilantro, and lemon juice.
  9. Cook for an additional 5 minutes, stirring occasionally.
  10. Serve hot and garnish with extra cilantro if desired.
