  1. Peel and grate the beetroot.
  2. Rinse and drain the black beans.
  3. In a large bowl, combine the grated beetroot, black beans, finely chopped onion, minced garlic, breadcrumbs, flaxseed meal, salt, and pepper.
  4. Use your hands to mix everything together until well combined.
  5. Shape the mixture into burger patties.
  6. Heat olive oil in a frying pan over medium heat.
  7. Cook the burger patties for about 4-5 minutes on each side, or until they are browned and cooked through.
  8. Toast the burger buns.
  9. Assemble the burgers by placing a lettuce leaf, tomato slice, and pickle on the bottom half of each bun.
  10. Place the cooked beetroot patties on top and cover with the other half of the bun.
  11. Serve the beet it burgers immediately.
