Rinse the rice under cold water until the water runs clear.

In a large pot, bring water to a boil and add the rice. Cook until the rice is 80% cooked. Drain and set aside.

Heat oil in a pan and add the chopped onion, garlic, and ginger. Sauté until golden brown.

Add the mixed vegetables and cook for a few minutes.

Add the spices - red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well.

Add the cooked rice to the pan and toss everything together.

Cover the pan and let the rice cook on low heat for 10 minutes.

Garnish with fresh coriander leaves and serve hot.
