Did you know that veggie burgers have been around since the early 1980s? They were initially created as a vegetarian alternative to traditional meat-based burgers.

  1. Drain and rinse the black beans.
  2. Remove the stems from the Portobello mushrooms and finely chop them.
  3. In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.
  4. Add the chopped Portobello mushrooms, finely chopped onion, minced garlic cloves, breadcrumbs, ground flaxseed, water, smoked paprika, cumin, salt, and black pepper to the bowl. Mix well to combine.
  5. Shape the mixture into 4 patties.
  6. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and crispy.
  7. Toast the burger buns if desired.
  8. Assemble the burgers by placing a patty on the bottom bun, then adding lettuce, tomato slices, red onion slices, and pickles.
