Barley With Dried Mushrooms
Barley is one of the oldest cultivated grains and has been used as a food source for thousands of years.

Soak the dried mushrooms in warm water for 20 minutes.

Drain the mushrooms and chop them.

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic cloves. Sauté until golden brown.

Add barley and stir for 1 minute.

Add chopped mushrooms and vegetable stock.

Season with salt and black pepper.

Bring to a boil, then reduce heat to low and cover.

Simmer for 30 minutes or until barley is tender.

Remove from heat and let it rest for 5 minutes.

Fluff the barley with a fork and garnish with fresh parsley.
