Rinse the lentils and rice separately.

In a pot, heat oil and sauté onions, garlic, and ginger until fragrant.

Add the spices (turmeric, cumin, coriander) and cook for another minute.

Add the lentils, rice, and water to the pot. Bring to a boil.

Reduce heat, cover, and simmer for 20-25 minutes until lentils and rice are cooked.

In a separate pan, fry the diced potatoes until golden brown.

Once the lentils and rice are cooked, stir in the fried potatoes.

Garnish with chopped cilantro and serve hot.
