Barley, Wild Rice, and Cranberry Pilaf
Barley is one of the oldest cultivated grains and has been used as a food source for thousands of years.

In a large saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.

Add barley and wild rice to the saucepan. Stir and cook for 2 minutes.

Add vegetable broth, dried cranberries, salt, and black pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 35-40 minutes or until the grains are tender and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff the pilaf with a fork and garnish with chopped parsley.
