In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and celery. Cook until vegetables are tender.

Add barley, mixed beans, vegetable broth, tomato paste, bay leaves, dried thyme, salt, and black pepper. Bring to a boil.

Reduce heat, cover, and simmer for 30 minutes or until barley and beans are cooked.

Remove bay leaves and garnish with fresh parsley before serving.
