Portobello mushrooms are actually mature cremini mushrooms that have been allowed to grow larger, giving them a meaty texture and rich flavor.

  1. Preheat the grill to medium-high heat.
  2. Clean the Portobello mushrooms and remove the stems.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt, and black pepper.
  4. Brush the marinade on both sides of the mushrooms.
  5. Grill the mushrooms for about 4-5 minutes per side until tender.
  6. Toast the ciabatta bread on the grill for 1-2 minutes.
  7. Spread the sun-dried tomato aioli on the bottom half of each bread.
  8. Top with grilled mushrooms, red onion slices, and baby spinach leaves.
  9. Close the sandwiches with the top half of the bread.
  10. Grill the sandwiches for another 2-3 minutes until the bread is crispy.
  11. Remove from the grill and let rest for 5 minutes.
  12. Slice the sandwiches in half and serve.
