  2. Cook the red lentils according to package instructions. Drain and let cool.
  3. In a large mixing bowl, combine the cooked lentils, almond flour, coconut sugar, coconut oil, almond butter, vanilla extract, baking powder, cinnamon, and salt. Mix well.
  4. Fold in the dark chocolate chips and chopped nuts, if using.
  5. Scoop spoonfuls of the dough onto the prepared baking sheet, spacing them apart.
  6. Bake for 12-15 minutes, or until the edges are golden brown.
  7. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
