Chayote squash is also known as vegetable pear or mirliton, and it belongs to the gourd family.

Preheat the oven to 400°F (200°C).

Cut the chayote squash into halves lengthwise and remove the seeds.

Place the squash halves on a baking sheet.

Drizzle olive oil over the squash and sprinkle with minced garlic, salt, and black pepper.

Bake in the preheated oven for 25-30 minutes or until the squash is tender.

Remove from the oven and sprinkle with grated Parmesan cheese.

Return to the oven and bake for an additional 5 minutes until the cheese is melted and golden.

Garnish with fresh parsley and serve hot.
