  2. Cut the chayote squash into halves lengthwise and remove the seeds.
  3. Place the squash halves on a baking sheet.
  4. Drizzle olive oil over the squash and sprinkle with minced garlic, salt, and black pepper.
  5. Bake in the preheated oven for 25-30 minutes or until the squash is tender.
  6. Remove from the oven and sprinkle with grated Parmesan cheese.
  7. Return to the oven and bake for an additional 5 minutes until the cheese is melted and golden.
  8. Garnish with fresh parsley and serve hot.
