  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice the butternut squash into small cubes.
  3. Place the diced squash on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  4. Roast in the preheated oven for 20-25 minutes, or until the squash is tender.
  5. In a pan, heat olive oil and sauté the onion, garlic, and ginger until fragrant.
  6. Add the turmeric powder, coriander powder, cumin powder, garam masala, and salt. Cook for another minute.
  7. Add the roasted butternut squash, frozen peas, and fresh coriander leaves to the pan. Mix well.
  8. Remove from heat and let the filling cool.
  9. Take a phyllo pastry sheet and cut it into strips.
  10. Place a spoonful of the filling at one end of the strip and fold it diagonally to form a triangle.
  11. Continue folding the strip in a triangular shape until you reach the end.
  12. Repeat with the remaining strips and filling.
  13. Place the samosas on a baking sheet lined with parchment paper.
  14. Brush the samosas with olive oil.
  15. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  16. Let the samosas rest for 5 minutes before serving.
  17. Serve hot with chutney or sauce of your choice.
