Avocados are technically a fruit, not a vegetable, and they belong to the berry family.
This is vegan, gluten free and low carb recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the oven to 400°F (200°C).

Cut the avocados in half and remove the pits.

Scoop out some of the flesh from each avocado half to create a larger cavity.

In a bowl, mix the cherry tomatoes, red onion, lime juice, cilantro, salt, black pepper, and olive oil.

Stuff the avocado halves with the tomato mixture.

Place the stuffed avocados on a baking sheet and bake for 15 minutes.

Remove from the oven and let them rest for 5 minutes.

Serve as a starter or appetizer.
