Tagine refers to both the cooking vessel and the dish prepared in it. It is a traditional Moroccan slow-cooked stew, named after the earthenware pot in which it is cooked.

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the aubergine and cook until browned.
  3. Stir in the ground cumin, coriander, paprika, and cinnamon. Cook for 1 minute.
  4. Add the tomatoes, tomato paste, and vegetable stock. Bring to a simmer and cook for 15 minutes.
  5. Add the chickpeas, salt, and black pepper. Cook for another 15 minutes.
  6. Remove from heat and let it rest for 10 minutes.
  7. Serve hot, garnished with fresh coriander leaves.
