Drain and rinse the artichoke hearts and lima beans.

In a large pan, heat olive oil over medium heat.

Add minced garlic and diced onion to the pan and sauté until fragrant.

Add the artichoke hearts and lima beans to the pan and cook for 5 minutes.

Stir in diced tomato, parsley, lemon juice, salt, and black pepper.

Cover the pan and let it simmer for 15 minutes.
