  1. Cook the brown rice according to package instructions.
  2. Preheat the oven to 350°F (175°C).
  3. In a large skillet, heat olive oil over medium heat.
  4. Add onion, celery, and cook until softened, about 5 minutes.
  5. Add diced apple, walnuts, dried cranberries, fresh parsley, fresh thyme, salt, and black pepper. Cook for another 3 minutes.
  6. In a large mixing bowl, combine the cooked rice and the sautéed mixture from the skillet.
  7. Gradually add vegetable broth to the mixture until desired moistness is achieved.
  8. Transfer the mixture to a baking dish and cover with foil.
