Almond Wild Rice
Wild rice is not actually rice, but the seed of an aquatic grass native to North America.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Rinse the wild rice under cold water.

In a large pot, bring the vegetable broth to a boil.

Add the wild rice to the boiling broth and reduce the heat to low. Cover and simmer for 30 minutes, or until the rice is tender.

While the rice is cooking, heat olive oil in a skillet over medium heat.

Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.

Add the almonds to the skillet and cook until they are lightly toasted.

Once the rice is cooked, fluff it with a fork and transfer it to a serving bowl.

Add the sautéed onion, garlic, and almonds to the rice and toss to combine.

Season with salt, pepper, and fresh parsley.

Let the flavors meld for 5 minutes before serving.
