In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Cook until vegetables are tender.

Add white beans, vegetable broth, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

Using an immersion blender or a regular blender, puree the soup until smooth.

Serve the soup hot, garnished with a dollop of pistou on top.
