Algerian Lentil Soup (Chorba Adas)
Chorba Adas is a popular Algerian soup that is traditionally served during Ramadan as a starter to break the fast.

Rinse the lentils under cold water.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic cloves. Saute until the onion is translucent.

Add the diced carrot, potato, and tomato to the pot. Stir in the paprika, cumin, and cayenne pepper.

Pour in the vegetable broth and add the rinsed lentils. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the lentils are tender.

Remove the pot from the heat and let the soup rest for 10 minutes.

Use an immersion blender or a regular blender to puree the soup until smooth.

Stir in the lemon juice, salt, and black pepper.

Serve the soup hot, garnished with fresh cilantro.
