Algerian Couscous
Couscous is a staple food in many North African countries and is traditionally prepared by steaming it over a stew of vegetables and meat.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic cloves. Cook until onion becomes translucent.

Add ground cumin, ground coriander, ground turmeric, salt, and black pepper. Stir well.

Add chopped carrots, zucchini, and potatoes. Cook for 5 minutes.

Add vegetable broth and bring to a boil. Reduce heat and simmer for 30 minutes.

Rinse and drain chickpeas. Add them to the pot and cook for an additional 10 minutes.

In a separate pot, prepare couscous according to package instructions.

Fluff the cooked couscous with a fork and serve it with the vegetable stew.

Garnish with fresh parsley and serve with lemon wedges.
