Rinse the lentils and soak them in water for 1 hour.

In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, carrot, and potato. Cook until the vegetables are softened, about 5 minutes.

Add the red bell pepper, tomato, ground cumin, dried oregano, paprika, and aji amarillo paste. Cook for another 2 minutes.

Drain the lentils and add them to the pot. Stir to combine.

Add the vegetable broth, salt, and black pepper. Bring to a boil, then reduce the heat to low and simmer for 45 minutes, or until the lentils are tender.

Remove from heat and let the stew rest for 10 minutes before serving.
