Stir in the peanut butter, vegetable broth, crushed tomatoes, curry powder, cayenne pepper, salt, and black pepper.

Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the vegetables are tender.

Stir in the spinach, lime juice, and cilantro. Cook for an additional 2 minutes.
