  1. Soak the black-eyed beans overnight and drain.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic cloves. Sauté until the onion is translucent.
  3. Add the soaked black-eyed beans, vegetable broth, paprika, cumin, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the beans are tender.
  4. While the beans are cooking, prepare the collard greens. Remove the stems and chop the leaves into bite-sized pieces.
  5. In a separate pan, heat olive oil over medium heat. Add the chopped collard greens and sauté until wilted.
  6. Add the chopped tomato to the collard greens and cook for another 5 minutes.
  7. Once the beans are tender, add the cooked collard greens and tomato mixture to the pot. Stir well and let simmer for another 5 minutes.
  8. Remove from heat and stir in lemon juice.
  9. Let the dish rest for 5 minutes before serving.
  10. Serve hot and enjoy!
