Slice the eggplant, zucchini, bell pepper, and onion into thin rounds.

Mince the garlic cloves.

In a large baking dish, layer the sliced vegetables and minced garlic.

Drizzle olive oil over the vegetables and season with salt, black pepper, and fresh thyme.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender.
