Tagine, also known as Tajine, is a traditional North African dish named after the earthenware pot in which it is cooked. The unique conical shape of the pot helps to retain moisture and enhance the flavors of the ingredients.

  1. Heat olive oil in a large tagine or a deep, heavy-bottomed pot.
  2. Add chopped onion and minced garlic cloves. Sauté until fragrant and translucent.
  3. Add sliced carrots, potatoes, zucchini, and bell pepper. Stir well.
  4. Drain and rinse canned chickpeas, then add them to the pot.
  5. Add dried apricots, raisins, ground cumin, ground coriander, ground cinnamon, and ground turmeric. Mix everything together.
  6. Pour vegetable broth over the vegetables and season with salt.
  7. Cover the tagine or pot and simmer on low heat for about 1 hour, or until the vegetables are tender.
  8. Remove from heat and let it rest for 10 minutes.
  9. Garnish with fresh cilantro and parsley.
  10. Serve the tagine with lemon wedges on the side.
