Preheat the oven to 350°F (175°C).

In a large bowl, combine the rolled oats, almond flour, coconut sugar, baking powder, cinnamon, and salt.

In a separate bowl, whisk together the almond milk, coconut oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Line a baking sheet with parchment paper.

Scoop about 2 tablespoons of the oatcake mixture onto the baking sheet and flatten it slightly with the back of a spoon.

Bake for 15 minutes or until the edges are golden brown.
