Peel and slice the carrots into thin strips.

Heat some oil in a pan and add minced garlic. Stir-fry for a minute.

Add the carrot strips and stir-fry for 3-4 minutes until slightly tender.

In a small bowl, mix soy sauce, honey, sesame oil, water, cornstarch, salt, and black pepper.

Pour the sauce over the carrots and stir-fry for another 2-3 minutes until the sauce thickens.

Garnish with chopped green onions.
