Rinse the lentils and soak them in water for 30 minutes.

In a large pot, heat the cooking oil and sauté the onion, garlic, and ginger until fragrant.

Add the tomatoes, turmeric, cumin, coriander, salt, and black pepper. Cook for 5 minutes.

Drain the lentils and add them to the pot. Stir well.

Add enough water to cover the lentils and bring to a boil. Reduce heat and simmer for 20 minutes or until the lentils are tender.

Stir in the fresh cilantro and lemon juice.

Let the dish rest for 10 minutes before serving.
