In a food processor, blend almonds and dates until crumbly. Add coconut oil and blend again until the mixture sticks together.

Press the mixture into the bottom of a tart pan to form the crust.

In the same food processor, blend cashews, maple syrup, lemon juice, and vanilla extract until smooth and creamy.

Pour the cashew cream mixture onto the crust and spread it evenly.

Place the tart in the refrigerator and let it rest for at least 2 hours.
