In a large pot, heat some oil and sauté the chopped onion and minced garlic until fragrant.

Add the grated ginger and sliced carrots to the pot and cook for a few minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the carrots are tender.

Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to the pot and stir in the coconut milk, lime juice, salt, and black pepper.

Cook for another 5 minutes to heat through.
