Haystack cookies are called so because their shape resembles haystacks.

In a large bowl, combine rolled oats, shredded coconut, and cocoa powder.

In a small saucepan, heat peanut butter, honey, vanilla extract, and salt over low heat until melted and well combined.

Pour the peanut butter mixture over the dry ingredients and mix until everything is evenly coated.

If desired, stir in chopped nuts.

Line a baking sheet with parchment paper.

Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet.

Use your hands to shape each portion into a haystack shape.

Place the baking sheet in the refrigerator and let the cookies set for at least 1 hour.
