Cut the potatoes into thick wedges.

Arrange the seasoned potatoes in a single layer on a baking sheet.

Bake for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy.

While the fries are baking, prepare the smoky ketchup by combining ketchup, liquid smoke, and maple syrup in a small bowl.
