Roasted Sweet Potato & Garlic Soup
Sweet potatoes are a great source of dietary fiber, vitamins, and minerals. They are also rich in antioxidants and have a lower glycemic index compared to regular potatoes.

Preheat the oven to 200°C (400°F).

Peel and cube the sweet potatoes.

Place the sweet potatoes and garlic cloves on a baking sheet. Drizzle with olive oil and toss to coat.

Roast in the preheated oven for 30-35 minutes, or until the sweet potatoes are tender and slightly caramelized.

In a large pot, heat olive oil over medium heat. Add the onion and sauté until translucent.

Add the roasted sweet potatoes, garlic cloves, vegetable broth, coconut milk, salt, black pepper, and paprika to the pot.

Bring to a boil, then reduce heat and simmer for 10 minutes.

Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.

Return the soup to the pot and heat over low heat until warmed through.

Serve hot, garnished with fresh parsley.
