Rinse the rice under cold water until the water runs clear.

In a large pot, heat olive oil over medium heat. Add onion, garlic, and green bell pepper. Cook until softened.

Add sofrito, tomato sauce, cilantro, salt, black pepper, cumin, and bay leaves. Stir well.

Add rice, kidney beans, and water. Bring to a boil.

Reduce heat to low, cover, and simmer for 30 minutes or until rice is cooked and liquid is absorbed.

Remove from heat and let it rest for 10 minutes.
