Gelson’s Vegetable Chili
Chili con carne, a traditional chili recipe, originated from Texas and was popularized by cowboys in the late 19th century.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 16.

Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.

Add bell peppers, zucchini, and corn kernels. Cook for 5 minutes, stirring occasionally.

Add canned black beans, canned kidney beans, and canned diced tomatoes with their juice. Stir well.

Add chili powder, cumin powder, paprika, salt, and black pepper. Stir to combine.

Bring the chili to a boil, then reduce heat to low and simmer for 20 minutes, stirring occasionally.

Remove from heat and let the chili rest for 5 minutes.

Stir in fresh cilantro and lime juice.
