Rinse the red lentils under cold water.

In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the tomatoes, turmeric, cumin, coriander, and chili powder. Cook for a few minutes.

Add the red lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the lentils are tender.

Blend the soup until smooth using an immersion blender or regular blender.

Stir in the lemon juice and season with salt and pepper to taste.
