Okara is a byproduct of soy milk production and is often used as a meat substitute in vegetarian and vegan recipes.

Peel and boil the potatoes until tender. Drain and mash them.

In a pan, sauté the chopped onion and minced garlic until golden brown.

In a large bowl, combine the mashed potatoes, sautéed onion and garlic, okara, breadcrumbs, cornstarch, soy sauce, salt, and black pepper. Mix well.

Shape the mixture into small balls using your hands.

Heat vegetable oil in a frying pan over medium heat.

Fry the potato balls until golden brown and crispy on all sides.

Remove from the pan and drain on a paper towel to remove excess oil.

Serve hot as an appetizer or snack.
