Preheat the oven to 425°F (220°C).

Peel and slice the carrots into 1-inch thick rounds.

In a bowl, toss the carrots with olive oil, garlic cloves, cumin powder, paprika, red pepper flakes, salt, and black pepper.

Spread the seasoned carrots on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.

Allow the roasted carrots to cool for 5 minutes.

Transfer the roasted carrots to a blender or food processor. Add lemon juice and fresh cilantro.
