Maqloobeh
Maqloobeh, which means ‘upside down’ in Arabic, is a traditional Palestinian dish that is known for its unique presentation and delicious flavors.

In a large pot, heat olive oil and sauté the onions and garlic until golden.

Add the chicken pieces and cook until browned.

Add the spices and salt, and stir well.

Add the cauliflower, eggplant, and rice. Pour water over the ingredients.

Cover the pot and simmer for 30 minutes or until the rice and vegetables are cooked.

Remove the pot from heat and let it rest for 10 minutes.

Invert the pot onto a large serving dish, allowing the Maqloobeh to come out in a layered form.

Garnish with pine nuts and parsley.
