Heat oil in a pan and fry tofu until golden brown. Set aside.

In the same pan, sauté onions, garlic, and ginger until golden.

Add tomatoes, red chili powder, turmeric powder, cumin powder, coriander powder, vinegar, and salt. Cook until tomatoes are soft.

Add fried tofu and water. Simmer for 10 minutes.

Rest for 10 minutes before serving.
