Preheat the oven to 400°F (200°C).

Peel and slice the carrots into thin rounds.

In a bowl, mix together honey, olive oil, salt, and black pepper.

Toss the carrots in the honey mixture until well coated.

Spread the carrots in a single layer on a baking sheet.

Roast in the preheated oven for 20 minutes, or until the carrots are tender and caramelized.
