Red Lentil and Bulgur Soup

Rinse the red lentils and bulgur under cold water. Set aside.

In a large pot, heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic. Cook until softened, about 5 minutes.

Add the tomato paste, cumin, and paprika. Cook for another 2 minutes.

Add the red lentils, bulgur, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils and bulgur are cooked through.

Stir in the lemon juice, parsley, salt, and black pepper. Cook for another 2 minutes.

Remove from heat and let the soup rest for 5 minutes.

Serve hot and garnish with additional parsley if desired.
