Preheat the oven to 400°F (200°C).

Slice the eggplant (aubergine) into thin rounds.

In a bowl, combine olive oil, salt, garlic powder, paprika, and ground black pepper.

Dip each eggplant slice into the oil mixture, coating both sides.

Coat each slice with breadcrumbs.

Place the coated slices on a baking sheet.
