Lentils are one of the oldest cultivated crops and have been eaten for thousands of years.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Rinse the lentils and set aside.

In a large pot, heat olive oil over medium heat.

Add chopped onion, carrot, celery, and minced garlic. Cook until vegetables are tender.

Add tomato paste, cumin, paprika, bay leaves, salt, and black pepper. Stir well.

Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes.

Remove bay leaves and stir in fresh parsley and lemon juice.

Let the soup rest for 5 minutes before serving.
