Add nettle leaves, vegetable stock, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.

Using an immersion blender, blend the soup until smooth and creamy.

Stir in coconut milk and lemon juice. Cook for an additional 2 minutes.

Remove from heat and let the soup rest for 5 minutes.
